Zucchini Pasta Sauce

1lb fresh zucchini 

1 leek 

¼ cup fresh basil 

1 cup vegetable stock 

¼ cup white wine 

1 tsp olive oil 

2 tbsp. RA seasonings Zesty Garlic 


In large skillet add olive oil, heat, add leek and sweat.

Add sliced zucchini and white wine.

Cook till wine is completely reduced and add 1/2 stock and Ra Seasoning.

Simmer on medium for 5 min.

Transfer to blender.

Add basil and blend till smooth adding additional stock to reach desired consistency.

Toss with your favorite pasta.
