3 cups broccoli florets
2 cups cauliflower pureè (recipe below)
2 cups vegetable stock
.5 cup chopped leek
3 tbsp RA Seasonings Garlic Cheddar
1 tsp vegan butter.
In medium saucepan on med hi heat melt butter and add leeks cook until translucent. Add broccoli and stir to coat broccoli. Add vegetable stock (reserving .5 cup) and bring to a simmer. Cook until tender. Add cauliflower (reserve .5 cup) and RA Seasoning stir to combine. Add remaining puree/stock to reach preferred consistency. Garnish with toasted leeks and your favorite pepper sauce.

1 head of cauliflower
4 cups water or vegetable stock
1 tsp vegan cream cheese
Boil cauliflower in water or stock. Place cauliflower in Vitamix or high-power blender w/cream cheese and a little cooking liquid at a time to reach creamy consistency.
