One Pan Meal- Roasted Chicken

A classic chicken roast is a comforting and hearty meal that is perfect for any occasion, from family dinners to special occasions. This recipe for a juicy and flavorful chicken roast is a great way to impress your guests or enjoy a delicious meal with your loved ones. Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 1 lemon, sliced
  • 1 onion, chopped
  • 2 potatoes, diced
  • 4 carrots
  • 3 tbsp butter, softened
  • 2 tbsp olive oil
  • 2 Tablespoons Greek RA Seasoning

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Rinse the chicken inside and out with cold water and pat it dry with paper towels.

  3. In a small bowl, mix together the softened butter and Greek RA Seasoning.

  4. Gently lift the chicken skin and rub the butter mixture under the skin, spreading it evenly over the chicken.

  5. Stuff the chicken cavity with the chopped onion and lemon slices.

  6. Tie the chicken legs together with kitchen twine to keep the stuffing inside.

  7. Rub the outside of the chicken with olive oil and sprinkle it with a little bit of Greek RA Seasoning.

  8. Place the chicken in a roasting pan, breast side up.

  9. Add other vegetables like carrots, potatoes, and onion to the roasting pan for a one-pan meal.
  10. Roast the chicken for 1 to 1 1/2 hours, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the meat.

  11. Once the chicken is done, remove it from the oven and let it rest for 10-15 minutes before carving.

  12. Serve the chicken with your favorite sides and enjoy your delicious homemade chicken roast!
