Grilled Salmon with Mango Salsa and Rice

This Grilled Salmon with Mango Salsa recipe is perfect for a healthy and flavorful dinner. The combination of juicy salmon, sweet mango, and zesty seasonings will impress your taste buds and leave you feeling satisfied. Plus, it's easy to make and perfect for grilling season!

Ingredients:

  • 4 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 ripe mango, diced
  • 1 small red onion, diced
  • 1/2 red bell pepper, diced
  • 2 Tablespoon Cilantro Jalapeño Lime RA Seasoning 
  • 1/4 cup chopped fresh cilantro
  • 1 cup brown rice
  • 2 cups water

Instructions:

  1. In a medium saucepan, combine brown rice and water. Bring to a boil, then reduce heat and simmer for 35-40 minutes, or until rice is tender.

  2. Preheat grill to medium-high heat.
  3. Season salmon fillets with 1 Tablespoon of Cilantro Jalapeño Lime RA Seasoning, then brush them with olive oil.
  4. Grill the salmon fillets, skin-side down, for 4-5 minutes per side, or until cooked through.
  5. While the salmon is cooking, prepare the mango salsa. In a medium bowl, combine diced mango, diced red onion, diced bell pepper, chopped cilantro, and 1 Tablespoon Cilantro Jalapeño Lime RA Seasoning. Mix well.
  6. Once the salmon is done, remove it from the grill and transfer to a serving plate.
  7. Top each salmon fillet with a generous portion of mango salsa and a bed of rice.
  8. Serve immediately and enjoy!

Note: If you prefer, you can also cook the salmon fillets in a skillet over medium-high heat with a little bit of olive oil.
