Caribbean Jerk Chicken Thighs

Ingredients:

  • 4-6 bone-in, skin-on chicken thighs or drumsticks
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 3 Tablespoons Caribbean Jerk RA Seasoning

Instructions:

  1. In a large bowl, whisk together olive oil, soy sauce, apple cider vinegar, and Caribbean Jerk RA Seasoning.
  2. Add the chicken to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 1 hour or overnight.

  3. Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).

  4. Remove the chicken from the marinade, shaking off any excess. Discard the remaining marinade.

  5. If grilling, place the chicken on the grill skin-side down and cook for 6-7 minutes per side, or until the internal temperature of the chicken reaches 165°F (74°C).

  6. If baking, arrange the chicken on a baking sheet and bake for 35-40 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

  7. Once the chicken is cooked, let it rest for 5-10 minutes before serving.

  8. Serve the Caribbean jerk chicken with lime wedges and your favorite sides. Enjoy your delicious and flavorful chicken dish!

Note: You can also add more vegetables to the marinade, such as bell peppers and onions, to create a delicious and colorful Caribbean-inspired skewer dish.
