Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers, tops removed and seeds and membranes removed
  • 1 lb ground turkey
  • 1 cup cooked quinoa
  • 1/2 onion, chopped
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)
  • 1 tbsp olive oil
  • 2 Tablespoons Taco 'Bout It RA Seasoning
Instructions:
  1. Preheat oven to 375°F.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
  3. Add ground turkey to the skillet and cook until browned, breaking up any large chunks with a wooden spoon.
  4. Add cooked quinoa and diced tomatoes to the skillet and stir to combine.
  5. Season the mixture with RA Seasoning Taco 'Bout It.
  6. Stuff each bell pepper with the turkey and quinoa mixture and place in a baking dish.
  7. If using cheese, sprinkle shredded cheese over the top of each stuffed bell pepper.
  8. Bake for 25-30 minutes, or until the bell peppers are tender and the cheese is melted and bubbly.
  9. Serve hot and enjoy!
