- 1 cup quinoa
- 2 cups water
- 1/2 cup red bell pepper, chopped
- 1/2 cup shredded carrots
- 1 cherry tomatoes, chopped
- 1 cucumber, chopped
- 1/2 cup of broccoli, cook if desired
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 Tablespoon Zesty Garlic RA Seasoning
In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is tender.
In a large bowl, combine cooked quinoa, chopped carrots, bell peppers, cucumber, tomatoes, broccoli.
