Chile Verde Eggs Benedict: A Brunch Classic Recipe

Instructions

Prepare the Hollandaise Sauce

  2. Blend on low speed until the mixture is smooth and emulsified. If the mixture is too thick, add a teaspoon of water at a time until it reaches the desired consistency.
  3. Keep the hollandaise sauce warm in a bain-marie or over low heat until ready to serve.

Cook the Canadian Bacon

  1. Preheat a skillet or griddle over medium heat.
  2. Cook the Canadian bacon for 2-3 minutes per side, or until crispy.

Poach the Eggs

  1. Fill a saucepan with about 2 inches of water and bring to a simmer.
  2. Add a splash of white vinegar to the water.
  3. Crack each egg into a small bowl.
  4. Gently slide each egg into the simmering water. Cook for 3-4 minutes, or until the whites are set and the yolks are still runny.
