2lbs pork, beef, or chicken cubed
2lbs fresh green chili or (2 10oz canned fire roasted diced chili)
2Tbls flour or flour alternative
3 tablespoons RA seasoning Chili Verde
1 yellow onion
4 garlic cloves
1 can light beer (I use tecate)
1 tablespoon oil
Preheat oven to 425° to roast chili's, onions, jalapeno, garlic, and tomatillo drizzle with olive oil, RA Seasonings and pepper roast 20-30min.
Peel and pulse in blender for 10 seconds. Looking for a rough chop. Combine flour and ⅓ RA Seasonings Chili Verde in bowl or large Ziplock.
Add cubed meat. Shake to coat.
Heat oil to medium high in large skillet.
Brown meat on all sides.
Remove meat from pan and deglaze pan with some beer add in crock pot.
Add roasted vegetables, browned meat, RA Seasonings, and can of beer.
Stir to mix.
Crockpot 5hrs on high or until meat is fork tender.
Let sit overnight for best flavor.
Serve w/ sour cream or your favorite cheese
